Took me ages to figure this out but all you have to do is press the volume rocker right down to zero on the standby screen.
This actually stops the exclamation tone every time you delete something and also, thank God, stops the noise that plays every time you send a text.
Nearly returned the handset because of that noise but much happier now I've sussed it. Just wish you could set a custom SMS rather than the 4 default ones!
