You can either remove the GPRS from the Internet group (in Internet Acounts), or create a new group just for it.

I did that. I have an "Internet Wi-Fi" group with wi-fi connections and the regular "Internet" for GPRS.

You can change the default group, and also force the phone to ask which group to use (Options in Itnernet Connections)

I hope it helps.

It shouldnt connect by itself unless you are running an app that needs it.

Set your mobile network to "3G Only", and you'll never have to worry about connecting to GPRS anymore until you set it back to "GSM and 3G" again.

you can also set it to 'cs only' under control panel-connections-internet accounts-more-options-preferred mode

This will make it only connect to GPRS when it needs to, and then automatically disconnect afterward. CS = 'circuit switched' and PS = 'packet switched' btw.
