I don't know when flash on, what is different if I change scences: auto, night portrait, portrait, document... About iso and shutter. can somebody help me?

You can take pics of same object and in same lighting condition and then see their EXIF.

when read it by notepad, how can we know the iso and shutter of each sence we choose while flash on?

right click on the pic -> Properties -> Summary -> Advanced >>.
