It seems as if everyone seems to know what they're talking about when they mention XS++ etc... but some people don't.

I'm trying to make the k850i theme work on my k800i. I've downloaded XS++ v3.1 and then what do I do?
How do I connect XS++ to my phone? To I put my phone in phone mode, file transfer mode?
Is it not possible for that k850i theme to be converted into one .thm file so that it is easier or is that not possible - especially with the menu icons.

A step to step guide would be greatly appreciated of how to apply the k850i theme to the k800i.

First, you don't need XS++ to load themes into the phone. A standard USB cable or the Bluetooth connection is all you need.
Secondly, K850 uses version 4.6 themes, while K800 uses version 4.5 themes, and therefore , the themes are not compatible. One way to fix this problem is to convert the theme with SonyEricsson's ThemesCreator program, which can be downloaded for free from SonyEricsson's web site. Most of the conversion is automatic, but for optimal results, you may need to do some adjustments manually using that program. For this, you may also need a program capable of unpacking .tar files (which is what .thm files actually are), like winrar or 7zip, in order to be able to extract image files from the theme, and a good picture editing program (photoshop, gimp, etc) to fix the images.

As far as I know, K800i does not support menu icons in the themes file, they are handled otherwise, and then you will need xs++ or similar tools. I have never used xs++ myself, but I suspect it comes with some kind of handling instructions.

thanks for clearing a few things for me

But other people have got the menu icons to also be like k850i and this is the part which i don't understand at all of how to do.
