IE.. Do Pioneer etc do a headunit with a HDD built that can rip cds to it?
make sense?

Sony's current
Xplod range include A2DP compatible headunits, iPod ready units with a 3.5mm input jack in the front, and units with a front mounted USB cable connector which should be compatible with any MP3 player and P1/W960/A200 phones that support Mass Storage Device connectivity mode. Plenty of options for you there...
Pioneer don't appear to have in-built storage in thier
current range and thier USB and iPod connections are REAR mounted which can be inconvenient.

and I got 2x 4GB Lexar USB drives for £20 from mymemory.com, prolly even cheaper now, but their the smallest physical size so that they hardly stick out of it at all.
Means you can have, well, whatever the max capacity is of the stick. And mine just dangle off my keys so I get in the car, rip it off the key ring and stick it in the drive, much easier
