I assume you wont be overclocking, then quadcore is a better bet (especially 3dsmax).So the options would be Q9550,Q9400,Q6700,Q6600.
The first two being newer,45nm is preferable.
If you plan to O/C,E8400/E8500 is your choice without second thoughts.

Dual core - E8400, cheap, nippy and great for overclocking!
Quad core - Like shyam335 said, get a Q9xxx processor if you plan to overclock as they are newer and 45nm which means they will run cooler.
But if not then the Q6600 is still an attractive choice.
I'd personally stick with the E8400 though, I ave one paired with an 8800GT and its a pretty solid PC!

3D rendering applications scales really well with more cores,so undoubtedly a quad core will have advantage over dual core.
So if 3d rendering important for you, choose a quad core.
As for motherboards, again you have couple of choices regarding chipsets viz,
P35,P45 (stands for performance mainstream)
X38,X48 (stands for Xtreme Performance and 'Xtra cost')
Though the performance might not vary too much or the extra cost. You get other stuff like PCI-e 2.0 (useful if you pair it with high end graphics cards),more sata ports etc
Then you can get myriads of variants from various manufacturers like asus, gigabyte, intel, msi etc.
So i would suggest Asus p5q variant(p45),Gigabyte GA EP45 DQ6.
Of course these are generic suggestions,it would be nicer to know your budget and other requirements.
