My English is not very good,so what do you mean with "simfree"
If i understand correct you mean that the sim should be removed from the phone while the phone is updating via SEUS?

I have a phone [z310] that I bought from an online store. It had Fido [Canada] branding on it, though it came unlocked. After updating it with SEUS, it was relocked to Fido. So how can one be sure that this won't happen?

No... If you have bought a sim-free phone, it won't lock after SEUS. But if your phone had been locked when you bought it and you have unlocked it via DaVinci team or something similar, it will probably lock after SEUS ( but I am not sure).
