I have a small gripe with the youtube application that comes with the satio, it doesn't seem to have a fullscreen feature, what is the point in having an app like this if it won't take full advantage of the large screen, does anyone know of an updated app or a setting that can alter this ?

Try VideoHUB:
http://www.openvideohub.com/OpenVideoHub_S60_5_0.sis this app allows you to even download YouTube vids and view any other flv format vids in your S60.

ok after using this for a while it does seem to have some issues, theplayer itself is supurb if it worked properly, what i find is that unless i completely download the video before playing it freezes after the first buffering stage, it's a pity because it uses the full screen of the satio and video quality is excellent but it won't stream, looking on the application website forum I see that others have this problem.

That realy is a pity,i use it to download the videos and then watch,i prefer that over streaming,but i can understand where you're coming from,not everyone wants to wait especialy if its a long video. Have you tried going into Settings- Start Video- and set it to As Soon as possible? And also making the Temp Memory the Phone Memory (its faster) ?
It should all be fixed in the next version, otherwise try Skyfire:

no idea if your phne works on this but kinoma app streams youtube in fantastic quality. even sharper than videohub. but playing a top quality stream without buffering all depends on your 3g speed of course. unfortunately kinoma isnt free
