I want to have white letters like the picture...
I use a Themes creator but i can't change this text color...

SE Theme creator/text/input text. I will double check this later.
EDIT: This won't work as it is now but you can use a .xml file to remove the white background in sms editing but that will make the conversation list dissappear.
