I am very new to mobile phoning, I am more used to the tall black phones without a dial, where you lift off the ear piece and just ask the operator for London 306. (just joking!)
I am, though, very confused about GPRS, MMS, emailing, pictures with emails and all such intricacies.
Can any one point me to a url, FAQ, or even an old fashioned book that will allow to to mug up on this topic.

www.whatis.com is pretty good for definitions, but any network's website, should give ample information, if solely for the purpose of advertising their own services.
GPRS is basically a means of transferring data. It allows you to send data (use WAP{mobile internet}, internet{if your phone allows}, send MMS). It does this by sending the info in packets and charging you not for the amount of time you spend online but for the quantity of material you download. It's also a constant connection. A bit like the mobile version of broadband.
MMS are just messages composed of pictures, text and sound or any combination thereof. This is becoming an increasingly common feature of the mobile phone, with the growth of the market for 'camera phones'
Email is email. If you can access this site, I'm guessing you know what email is

. On a mobile, it's just the same, although you are often able to view just text or emails without attachments, depending on the phone model.
Also, pictures can be sent via MMS to either another phone or an email address without having the facility to send emails on the phone itself.

Very interesting.
I have another question, what service provider offers (i) the best service and (ii) a cheap (well less dear) service?
Perhaps that's two questions!!

For what?
It depends what services you want. Are you talking UK service providers?
The important things are service coverage, cost, and the networks of the people you will call/will call you.

Yes, I agree - my question was a bit like "how long is a piece of string".
I must put my brain into gear before posting.
