I am a prospect buyer of P800, and I am wondering whether there is a single-key voice-memo recording functionality (similar to what the Ipaq s have)

No, but you can get to the voice memo app with the flip closed via the jog dial fairly quickly and whilst only using one hand.

Do you know whether you can program actions on "push and hold" of keys (similar to quick dial functions that many mobiles have?)
