Don't know for sure, but I have been told they replace the handset for a brand new one. Though the story is different from person to person...

I got mine back from Celestice yesterday and it was the same handset.
The hissing is now gone and all the ringtones sound just as loud.
They had replaced the sticker on the back of the phone that covers the screws so I assume that it was not a software fix and rather a hardware one.
I sent it on Monday and got it back on Wednesday morning.

How does this exactly work? Do you just send them your handset and they'll get rid of the hiss? Surely it costs something... Does anyone have the address? The hiss on mine isn't that bad, but it causes problems with the overall volume of the handset... it's not as loud as the old T68i.

Oh yeah, and do I have to include a small write-up of the problem when I mail it off? What should I include in the package?

You should send the handset only (keep the SIM card and battery, unless you have been advised that it is a battery fault) in a padded envelope by special delivery (which insures the package for up to £250 and also ensures next day delivery).
You should include a brief note including the following information :-
(1) Your name, contact telephone number and a return address.
(2) A brief description of the fault.
(3) The IMEI number of the handset which can be found on the back of the unit, underneath the battery. It is 15 digits long and starts 520 or 350.
(4) A photocopy of proof of purchase.

Apparently the fix involves replacing four resistors and a screening can that must be removed.
It's something to do with the voltage converters for the display or the backlight coupling noise into the audio amplfier that drives the earpiece.
