For the vodafone text, you need to get an Orange, T-mobile or O2 SIM card. Insert it in the phone, throw the Vodafone one away, and you'll never see that message again! (it's hardcoded to the SIM card, it'll display on any phone you put a modern Voda SIM in.)

As for the startup animations - please search or wait for someone else with more free time to explain fully. Some of us created full explanations about 4-5months ago of what to do and what to never ever think of doing if you don't want to have to get your phone flashed. My posts, and those of others, can be found here, at allaboutsymbian.com, at my-symbian.com, etc etc.

EDIT: Ah hell, i'm feeling nice - but don't expect it in future, ok?

rename full screen mp4 files to startup/shutdown.mp4 and put in C:/sysdata (or delete the voda ones there to get the original SE ones back). Now the warning - the startup video must contain NO sound, if it does, you won't be able to do anything to your phone except take it into a service centre. The shutdown vid can contain it's own sound. Note that other problems with the videos may also cause the phone to hang - best to test it as shutdown video first (can always just pull the battery and restart then), make sure it has no sound, then rename it to startup.mp4 once you are happy with it and the likelyhood of it working properly.

Edit:problems still coming out...

Well...since you wont be nice all the time you will probably not reply to this one but there is no video that the startup.mp4 or shutdown.mp4 can overwrite so I cannot see any new startup/shutdown videos. You ment to copy it to c:\system\data right?

my vodafone sim card dosnt do that .... just go to any vodafone store to swap the simcard to a new one .. u can keep ur number .. its just a transfer of a sim .... thats alll .. and if u guys have it where ever u from .. ask for sim2 ... gives u the option of puting 200 numbers on the sim instead of 100 ....

( i work at vodafone )

for the risks involved, I really wouldn't want to change my startup and shutdown screens...

You have been warned

But all Voda UK do for many years now, and I'm presuming that's where our OP resides.
