I'm not sure it can be done, or at least I can't find out how.

I've been trying to get it to work since I got my T610 on O2, but it always says something about not being able to find the server.

Exactly the same mail settings work fine when using O2's dial-up WAP access, just not through GPRS.

I vaguely remember reading something about O2's GPRS service can't link up with the internet properly to access POP3... something like that anyway... but I didn't understand the post fully.

yeah i seen that post too, so i called up o2 and asked them for a different APN that would allow me to access my mail, and the guy said, yeah fine, and sent it to my phone, still didnt work :/
