Anybody know whether this can be done or is it just the tasks that can be sync'ed?

I don't know if you can syncronize notes but you can send them to the phone.
Just select the note and choose 'send to blutooth' from the File menu in Outlook.
It works for me on my T610 and with my Belkin USB BT dongle.
