On a T610, when typing
After selecting Network it then says nck: and awaits input.
Is this where you can unlock the phone? and if so, where do you get the NCK code?

Thats exactly how you unlock your phone.
You need a cable and logger software to read the code. I got my log from:

Does this mean it IS possible to unloack without a Dongle cable?
I really want to unlock my T616 so I can use it with T-Mobile (was AT&T Phone)
But I don't have a Dongle and don't plan on spending over $30 on a cable or buying on eBay!

Only with nck but there isnt a prog as for nokia fones, whibh generates the unlock code.

nope, quite simply. well i havent heard of it and i dont think remote unlocking exists for SE phones IMO. Let me know if u know otherwise

Even if you unlock you phone, you won't be able to use it with T-mobile ... T-moble uses T610 and you are using T616..... the frequencies are different.
