3 uses umts band, the t610 doesnt handle this band, so i think it shouldnt work... though if there is no 3g signal the phones use the o2 2.5g network... so maby it will work but id say most likly not.

Word in the industry is if you call 3 they will "unlock your sim" - yes, seemed strange to me too but it seems the sim cards are locked to 3. However with a quick call to 3 customer services, these can then be unlocked. They will then be usable in any handset that is both HSCSD & GPRS compatible. It will have to be both (don't ask me why, I don't know the science behind it). They will therefore work in the T610 handset.
You will have to bare in mind though that you will not be able to access the 3 internet service from your phone which means no video downloading, no video calls, well basically no video calling. Also you will have to find out the 3 Picture Message settings, etc.
Good luck

What is the point of having a 3g SIM in a 2.5g phone? Sure then you won't be able to use 3 as your service provider and then will have to roam on o2. Bit of a strange request

not really a silly request - 3 offer the cheapest X-net i have ever seen, but NOBODY would want to be using a 3 "brick" phone which rival nokibricks for size!
