Hi all,
Every time I sync my P800 with my mac using iSync it replaces my contact's pictures on the phone with tiny little versions of the same pictures. Does anybody know why that is happening?

Unfortunately, becuase that's the way it works. Address Book pictures are always 48x48, so you wind up with the lowest common denominator. I don't know how/if/when they'll fix this, as the only easy way to do so would be to up the size in Address Book.
Personally, I like the small pictures better anyway, becuase I hate the way the P800 only shows the picture on incoming calls without the text (since I use company logos for a lot of my pictures). But I understand how annoying it is if you want to use the bigger ones.

I have a p800, isync 1.4 and panther10.3.4, but my pix aren't coming over when I sync... is there a Symbian update or something else I should be doing?

FWIW, this doesn't seem to happen for me with a P900.
The P900 appears to automatically scale down any 4:3 ratio images I assign as contact pictures to 208 x 155 (ie: maximum screen width). Additionally, if I drag-n-drop the same contact picture from Address Book to the desktop, it's also 208x155.
It doesn't look as though Address Book is responsible for incurring the re-scaling you're experiencing on your phone, but with that said, it would seem illogical for the P800 to be doing it (expect of course in the case above, where's it's optimizing for best fit on screen).
At what size does the P800 display a contact picture for say, an incoming call? Is it "full screen" (or typically "large"), or is it small, thumbnail sized? If the latter, then it's reasonable to assume that the P800 is scaling down your contact pics. And if this is so, then why does it matter if your contact pics are scaled down when they're only ever going to be displayed as tiny thumbnails?

Contact pictures have been parsing to and from my Mac & P900 for as long as I can remember. I haven't performed any special updates or anything, just the standard Apple Software Update routine and that's it.

I did a master reset on the phone, and everything has been Kriss n' Curry since, I really can't explain what the issue was, all is working now, which is what really matters. Thanks for the info though
