Just found out how to set number of rings until v.mail kicks in:
**61*083173*11*20#
You'll then be promted to "send"
20 is delay in seconds
083 is prefix for MTN phones - you may be able to figure out other operators' codes
173 is 1 lower than 174 which is number one diverts v.mail to if that's any help in setting fo other countries.

MTN is pretty snot on v.mail all round. HAVE to press 1 to listen to messages, crappy fwd and rwd, can't save message in middle, etc etc. How tough is this kinf of thing to update? Lamers!
