I find with the T310, the only way to get reasonable colours is to set the contrast to '-5'. Other settings give very weak colours.
Do other T310 users find the same, or do I have a dodgy phone???

It differs slightly from phone to phone - but yes you do have to turn down the contrast some.
You also have to compensate when you create pics/themes on the computer - and make them "darker" than you would normally do in order to make them look good on the phones display. Lots of pics you can find on the net are not optimised for the phonedisplay but for the computerscreen - hence they dont look good once you put'em on the phone.
Find some themes/pics from folks that also have T310 and have tried them in real life.
