I used the theme creator tutorial from http://members.lycos.co.uk/mosedrengen/tutorial/ to create my images, and then used someones suggestion to 'unpack' an existing theme using Expander which worked a treat. I found an existing theme with a colour scheme that matched my images and dropped the xml file from that theme in a folder with my images, and compressed them as a .tar file. I renamed it as a .thm file and then sent it to my phone, hey presto!
