Search function does not appear to be working, so I'm sorry if this has been asked.

Is it possible to use a "cable/IR/" connection from the laptop to the phone, and then use standard dial-up ISP settings on the laptop as though I was connect to a landline and dial on out, to browse web (slowly) etc....?

If this is possible, directions or a tutorial would be great!

the answer is yes, you can do exactly that, either via normal dial up or the faster GPRS.

You will need the mobile phone monitor from here if you have not installed the full sync suite.

Good stuff and ty. Out of curiosity, if I use, say the GPRS, this will count as normal minutes, or I will need an add-on from T Mobile, something like umlimited internet, etc...?

When you use GPRS you pay only for data up/downloaded, not for the duration. It can be rather expensive, especially if you are planning to be downloading things.
