I'm wondering if P900 can play mp3's with variable bitrate? If not, is there any other player that can ?

In theory, all mp3 players can play vbr mp3's, at least in theory, because of the flexibility of the mp3 format itself. All mp3's are divided into a number of "frames", where the bitrate of each frame is stated constantly per frame.
In general, players who display a constant bitrate for vbr files, just doesn't update the display, they show the bitrate for the first frame all the time. So they play the vbr files just the same (in fact, i don't think they have an option.

.
If you want, you can read more about this here:

Yes Junk is quite right. The P900 plays vbr files fine. I use vbr files for my ring tones. Done with Lame alt-preset 100 settings. For my audio mp3's I use alt-preset standard and they sound great.
