What band(s) is/are more popular with the US carriers? Low or high? It seems that if the 1900 is more prevalent then roaming will be easier because US GSM phones all use 1900. However if the carriers tend to go more with 850/900 then my roaming would be highly dependent on 1900 being more widely used. Does anybody have stats on this? I am a T-Mobile customer thinking about getting a T630 but the T637 seems to have slightly better features.

That would depend on the MNO and your location.

T-mobile offers 1900 only services, while Cingular (upgraded from their TDMA network) is a 800/850 MHz carrier, with some 1900 MHz coverage.

Here's a depiction of world GSM coverage. Look for your country in the map.

Well I just iterated on that. BTW I am a T-Mobile customer. In the US you got two choices. AT&T and Cingular use the 850/1900 band. T-Mobile the 900/1900 band. AT&T/Cingular overlays the 850 with the 1900 band. However the 850 band is higher quality (clearer reception and farther reaching). As is T-Mobile. Depending on your needs reception wise you choose the carrier. For me I wanted to have the P900, so my only real choice was T-Mobile, but I also wanted to be able to use my phone worldwide, again T-Mobile is the better choice, because the 850 band is mostly used in the US. If you travel you will find the 900 and 1800 band more often.
However, if you need a larger coverage here in the US, the 850 band is the way to go, because AT&T and Cingular cover more ground than T-Mobile. Just depends on your personal need.
