The general applist: u can't.
The flip open or closed shortcuts: in control panel, app shortcuts on P900 but it's slightly different on P800 only I can't remember.
If u want u can try something like Tracker4 which lets u create a desktop view with icons of your choice.

If you want Gnome icons on your p800 you just have to search for the IconSetGnome.sis on My-Symbian, it changes the standard p800 icons to Gnome icons.

you still haven't clarified which icons u mean. Is it just the shortcut icons on the flip closed screen & those across the top of the flip open/removed screen?
Also, u have no need to create skins yourself for Tracker there are hundreds to choose from! All u do is place icons of your choice on the desktop view, really rather easy!
