Until recently when I sent a text, it'd tell me afterwards what my pre-pay balance was, now it seems to have stopped doing it.
Anyone know how to get it back?

The balance service is provided by O2 & is not dependant on the phone i.e. turning delivery reports on/off or any other settings do not affect it.
By ringing O2 I know you can get the service stopped so maybe they have accidentally stopped yours. Try calling them or visiting an O2 shop to see if it needs reactivating.
