There's no such thing as a stereo speaker (singular). For sound to be reproduced in stereo there has to be two speakers, and they have to be positioned far enough apart for the ear to hear the stereo separation.
The K700 has a single speaker, so therefore cannot reproduce stereo sound through it.
If you use a headset with two earpieces, then you will hear the sound in stereo if it has been recorded in stereo.

As this phone has a single speaker, what happens to a mp3 file playback thru media player? is the output a true stereo sound or only one channel at random is heared.

I would of thought both channels(left and right) would both be played through the one speaker as not to lose too much of the quality/content? As some songs often have instruments/lyrics played thro one channel....

Both channels will be played through the single speaker as though the file was mono.
Stereo output is still maintained through the headset (a feature that Nokia lacks!

The 6600 doesn't even PLAY MP3 unless u d/load a 3rd party player!
So even then I think the answer is no for the headset and definately NO for the phones speaker as again it has only one loud speaker

if you play a stereo sound in the K700i, the left and right channel will be mixed (added) together into a single (mono) sound that contains information of both channels and played to the single speaker.
I'd like also to share (maybe a little off topic): I re-encoded my mp3s into mono and used 64Kbps to reduce the file to half it's size - playing it through the speakers give the same quality as when it was stereo - but when you listen through the stereo earphones, you will hear the same quality but obviously won't experience the same effect as the stereo version. I don't really mind at all since I can now carry as much as 20 of my favorite songs in my K700i.
