Search these forums for "Ericsson Client" and do the same if you want at Versiontracker.com under Mac OS X. There are currently no synching software that would do a full back up, but the author of Ericsson Client will be looking at doing it after it has been "completed".
There is also an app called ThemeEdit or something that will allow you to change the themes on your T68i. The author of this application has also posted a "review" on the Ericsson Client page at versiontracker.
As for your Mac talking to GPRS via your T68i and Bluetooth, can't say I've had the pleasure of trying. Maybe someone else could help you with it. There is a Yahoo discussion forum for Ericsson Client and I'm fairly sure someone's confirmed success.

Quick comparison
Nokia -> Microsoft -> Dumbed-down, featureless
Sony Ericsson -> Apple -> Loads of features, designed well (as of the T65...)

Theyre are T68 scripts for MacOSX for syncronization and net connections via Gprs and HSCSD. Just look around the net for them or search the ericsson Newsgroup.
This should get you started:
