In the past I've had my firmware of my P800 flashed at a SE service centre and it has wiped all the data on it. No problem as you can back up he phone on your PC.
I notice that you can now update the K700 and I expect the S700 via the SE site. However, and this is my question, will it wipe user settings, contacts etc?

Nope it does not wipe any data off the phone when you do it on the K700, S700...I think it is only the PXXX series for some reason.
