If you managed to de-brand your SE phone, for example a K700, would Vodafone stores refuse to service it, should it need repairing etc...?

Voda can't service phones anyway. You would take it to a SonyEricsson Service Centre or send it away.
The likelyhood is that once unbranded there places wouldn't know it should be, unless it has external branding too.
But anyway the warranty is provided by SonyEricsson not Vodafraud

It's very easy to see that it is a branded phone. Hardware (revision) and IMEI, wich you can't change.

Well, its no job...
When connecting to the legal SE serving tool used at service centers, they get the information automaticly.
I don't know with new platform, or if it depends on country, but in Sweden it doesn't matter if it's unbranded at service centers (T610/T630/Z600.

No, You can't. Not without soldering. What You change is a copy of the IMEI in the filesystem. What You can't change is the real IMEI, cause it's programed on a OTP chip, One-Time-Programable.
Service center tools read directly from that chip. They will even see that you've tried to change it, and that's not too good in most countries...
