I would like to know if there is any software for Linux or Palm OS that allow sync the T68 with my PC using Linux or with my PDA running Palm OS.

There used to be a free program called DI27 written by Martin Renschler, this will sync via infrared (enhanced ir drivers from Ericsson may be required) the Address Book numbers on your Palm to the Address Book in your T68/T68i mobile.
Designed for older models of Ericssons, but works okay with these newer models (with one exception on SMS sync, see below).
Be aware that it may take some time (a couple of minutes) to read the phone's address book on an Address Book Sync, and you can save the numbers back on the Palm (and vice versa). It's not something that you do quickly and often!
Dialling via infrared from this program from Palm to phone is also possible, but the SMS manager can only send an SMS to the phone (it is not possible to sync and archive SMS with the Palm as the T68i uses phone memory to store SMS and the DI27 program was never designed to make use of this feature).

Although you can sync your Palm on Linux, I do not know of any way to sync the T68/T68i to this Palm data on Linux - so I can't help here, sorry.
