Is there a good theme maker for Apple OSX available? Would like to make Z1010 myself.

Nothing for the Z1010 yet I think.

Bit there is this and this for K700 and T610 etc.

Try contacting the authors of those and requesting Z1010 support.

Apart from that, you can use the official Sony Ericsson Theme Creator on Virtual PC.
