the quickest and easiest way is probably to do a master reset and reinstall only what you really want on your P800

No, but you will lose everything that is not firmware (OS and basic fuctions).

the master reset will return the phone to the way it was when you first bought it (excluding any firmware updates you have done since which will still remain)

so all the stuff left behind from applications you have installed and removed will be gone

its like formatting your pc hard drive and installing windows so you are starting totally fresh and clean

Sorry, but masseur is very much mistaken here, because what he describes is the Format C: command in the service menu. The master reset does much less than that: although erases user data, settings, and installed programs, it may left behind a lot of crap (depending on how the phone was used previously).

Unless I am the one who is very much mistaken.

If you really want to clean up your device as much as possible then do a format C:. But in this case do not perform a restore afterwards, because that would put the junk back. So, after the format, you will need to reinstall all programs and recreate all your other data manually. This may cause difficulty if you have a lot of phonebook, agenda and/or message entries that you want to have on your phone again. There are threads about how to save/reload these manually, so search for further info.
