but can you pause a video recording while you are filming? As it can be done on some nokia soI I was wondering if you can with SE phones

It's a pretty simple suggestion that SE do not need to be made aware of. It's just something they do not implement into their phone probably because it's not really needed and it saves time.
If you want to put clips sections together you should use a proper camcorder or video editing software. The main objective of a phone is not to be a top quality video camera.
