.......I assume I would be able to flash My K750i to get rid of the O2 branding, however my question is this, would doing this void my warranty with O2 and would they be able to tell that I had tampered with it?
I assume that if I was to upgrade using SEUS it would not affect my warranty in anyway, but I would still have the branding?

To all your questions: YES.
They'd know if you'd had it unbranded, it would invalidate your warranty, but using the SEUS would be fine.
