I have had my P900 reflashed to P910. This reduces the internal memory, but I can now use a 1GB memory stick.

Ideally, I would like my applications (video, sound recorder, photos etc) to automatically save to the memory stick, rather than me moving the files each time when the internal memory becomes full.

Does anyone know how to do this?

depends on the app. some have options, some dont.

The internal ones can only save by default to the internal memory, but this depends on the firmware, I know with older p900 firmware it remembered where you saved things to but with the latest it dosnt.

I've found with the default apps it save in the last folder you were viewing. So if you open the camera and go to the image gallery and set it to the memory stick then go back to the camera. It remembers until you change it.

Works for me all my pics and vids go straight to the card.

Aren't you mixing up Internal Memory with Internal Disk?

(besides the internal disk being a flash memory, it works like a disk: file system, clusters, etc)
