My P900 has locked fido data on it's MMS screen. My understanding is that if I have my phone flashed and generic firmware installed this problem will be corrected and I can configure my MMS settings. Sony Ericsson told me that this is incorrect and there is no way to remove these settings...ever. Is this true or are they blowing smoke up my butt.

Well, flashing usually involves a trench coat, and some cops... maybe jail time if you're too slow. Hahahaha!!!
Seriously, flashing will NOT remove the provider lock.
The only LEGAL way to unlock your phone is to have Fido do it for a fee.
Illegally, you have to find an underground (not literally) shop that can unlock it... for a fee as well, but much cheaper. This voids your warranty, and MAY damage your phone permanently if not done properly (ie; unlocking guy has no idea what he's doing)
Flashing your firmware just updates the software... similar to installing Windows patches. It removes some known bugs (and introduces new ones..hahaha)

all is true.
You can update your P900 to the latest firmware yourself via the update web site. But this loads on the latest that your provider allows (in the case of orange its from the 1950's) but all locks remain.
If you try and load on the generic one it reads your hardware and tells you its not meant for your phone. But yes underground/market stalls can proberbly do an update and remove locks.
You could do it yourself but you need some expensive kit. So the market stall option is the cheapest.
Those cheap branded phones sound great, until you want to update them or actually have some fun
