as you can see on the
SE D750 product page, it supports memory stick PRO duo so 1gb will be fine and so should any larger sizes as they become available

You might want to try using .aac as the phone can play these as well and they in theory sound better using a small sampling size than .mp3. Example, a 98kbps .aac should sound better than a 128kbps .mp3 (all of you audio guru's passing through, please advise if I am incorrect). I have read this in several magazines. One thing to remember, if you rip in one sampling rate, do not re-rip the created file. Make them all new again or you will lose audio quality.

Does .mp4 videos play & sound better than .3gp on the K750i? Also does the phone support .aac files as ringtones?

MP4 and 3GP are only container formats containing a MPEG4 video track and a AAC or AMR sound track. So the answer is no, it's the same format actually.
No, you can't play .aac files at all in the phone, you can however put them in .mp4 or .m4a files and use them as ringtones.
