You can do the next best thing, which is to set the phone to ask for a password when it boots up, which means if it is stolen you can cancel the sim card, and when the thief removes the battery to put their own sim in they won't be able to use the phone when they start it back up.
They'd have to flash the phone to get around it, in which case your data will be written over by the flash (although advanced data recovery experts could still get most of it back - but that's thousands of dollars of expertise).

Actually that's not quite true, it's just a simple matter of unlocking the phone. This resets the usercode and all your data is then readily available.
In older phones such as the T610/Z600 etc, you can even just attach the phone to the software and it will read the code for you. No need to reflash at all.
It's also possible to read out the memory of the phones!
The "phone lock" code is like the "what to do in the event of an emergency" cards on planes, designed to give the illusion of safety!

So a crook or someone finding the phone could get it hacked into cheaply. I suppose if someone needs to protect data on their phone that bad, they need a smart phone with an encryption program.
Maybe an encrypted folder system, and an encrypted email client.

I'm sure most phone theives would just get the phone reflashed (and probably IMEI changed too), the wouldn't care about your data.
This is one reason I am very glad the new K700+ Phone flashing/unlocking utilities don't have IMEI changing as an option.
