If you upgrade the software of a t68 to an i, will it reset the count joystick count to 0? Meaning the unit could be passed of as brand new if it did.

Slightly off the point but - I dont think the joystick count can ever be 0 anyway as it takes a certain number of presses of the joystick to get to that menu.....

You can ask your service point to reset the joystick counter to 0. They have the equipment and software to do that even without an upgrade.
