I too have had this problem with my K750i, when my girlfriend has sent messages from her 3315.
We worked it out to be whenever a non-standard character is inserted into the message, the counter jumps, sometimes right up to 3 text messages.
In our case it was an O with a small dash over the top.
It makes sense for this to happen in handwriting recognition mode, as the phone is trying to match your writing as best it can, but is most likely putting in a non-standard character ever now and then. Of course this shouldn't cause the response that it does - but this is what I've found!

To my knowlegde accented characters like àáãéíóõç (etc) and others can not be represented in 7 bits. This means that probably they are being translated to multiple bytes.
One example when you send "Olé!" it's being translated to "Ol\\e´\\!" on send. The phones that receive the message then re-translates them to the original "Olé!"
This means that a message with 120 characters might will not fil 160 in characters, depending on the humber os special characters you use.
I'm making up this, but it makes sense to me
