I'm not 100% sure because I havn't used one myself, but I think you're right. They will function as normal passive noise cancelling headphones.
Good luck in choosing the right headphones for your needs m8.

You could find a better deal on ebay I guess, but I got mine here:

http://mobile.brando.com.hk/EarPhoneAdapterTo35.php

I got it slightly cheaper than what is advertised there because I joined a group of users from a Malaysian forum who got together and bought it in a bulk buy.

haha.. I brought the earphone adaptor for only 6.90 singapore dollars...

I find that it's very tight.. hard to plug in and out. And the radio signal is not as strong as the original one.

I paid about RM30 if I'm not mistaken... Fits perfect.

Anyway, we are going off topic here, the original poster wanted recommendations of good headphones, so guys, if u have any, let him know.

EDIT: I'm sorry I posted the BRANDO website, it turns out that my K750i adaptor was from www.doml.com. Sorry for the mixup. I got my PALM T3 PDA stuff from BRANDO. Too many bulk buys, got mixed up.

Anyway, here is the link to the doml website adaptor:
http://doml.com/productdec.asp?pid=2035&model=se_k750&modeln=K750

There is a model with a mic built in. I opted for the one without mic, luss bulkier.

BTW, both Brando and DOML are websites that I think are trustworthy.

Dude, the adaptor I bought from doml is really good. It fits perfectly, no crackle, loose pins or anything. I use it almost every single day. I shove the phone together with it in my pocket, and the wire gets bent, but touch wood, so far no problems for me.
The link is in my previous post. I think doml is based in Singapore.

If you want an adaptor that's for sure to work, then you could just get the ones from the W810, i use it for mi K800 and it fits perfectly and it works well and it's not that expensive, got it for abt $10.00 CAD
