Well in general (in addition to feature already available):
camera: Optical zoom 2x, stronger flash, keep it at 3.2mp please.
video: QVGA to match screen size
and finally: WEATHERPROOF design. waterproof may be too much to ask.
Edit: forget SSS/AS KM/Sony dSLR style if possible.

I like the joystick, makes the phone different from others. Sure difficult to care for but it's something I miss because my V600i had a 'stick but now I have a W810i, not a bad phone but I would like it if it had a 'stick.
should stick to making normal phones. Without sliders, flip tops. Swivel phones aren't bad e.g the S700 and the W900.

Honestly I love the K800i best phone I've had, not much I can think of to improve it but there are a few things I would like to see.
-Ditch the joystick and have more of d-pad design like on game pads
-3.2mp is plenty big enough I just want to see an improved sensor and the ability to control the compression of the jpegs more after all it's just a handy point and shoot for me but I want quality.
-a more thought out camera cover wouldn't go amiss either, quite liked the one from the the older w800
-Include a memory card with the phone next time tight fisted SE
Other than that it's a perfect phone for me.

my perfect phone would be like this:
-NO buttons, only a big clear scratch resistant touchscreen(3,5" with 320*480 pixles and 16 mil colors)
-NO camera, just 1-2 gb internal memory. with or without card slot
-long battery life
-VERY complicated menus, so fewer people can use that phone
