it is always 5 working days. No network can port a number quicker than that. If its more than 5 working days, it can be due to bank holidays, or a delay in either O2 releasing the number to 3 or it can be a delay in 3 recieving numbers from other networks.
Its a 2 step process so both networks have to rely on each other for the number to be transferred within the general time scale of 5 working days. You can expect to be without service between the hours of 7am to 10pm for your number to come over from O2 to the 3 network.
If 3 are not helping you by giving you correct information, ask them to speak to der MNP or Mobile Porting Department to see what the case is and why its being delayed.

Here in the U.S. it's the law that the providers MUST port your number when you ask, but they certainly drag their feet. It can take weeks in some of the worst cases I've heard. Others get it done same day. It should be automatic, but it's just not a priority for them. It's probably going to take a class action law suit to get the providers to do it right.

Its ported now, happened some time on tuesday, not sure when as I was continuing to look in the status screen on my k800i which displays my phone number. But it just remained my old one, so I didnt find out it was changed until I recieved a surprise text later on.
I wonder if the "My Mobile:" option will ever display my actual number.

As it's the same simcard, I suppose you'll have to change it yourself in "My Mobile".
