The option is there, but obviously only in FO mode and only available if you have downloaded the complete e-mail.

No FO mode then, but you need to download the mail first, at least on P990.
And the option is, again on p990, only available in the mail list view and not, if you have opened it.

The logic could be to save space on your server mailbox by deleting messages, whc u have decided to delete w/o even checking the content.
But once you've downloaded it, you get the options to delete it either permanently (phone + server) or only from the inbox of your mobile..

Another thing that doesn't make sense, when you choose Local Delete it still saves the headers in your phone inbox. I don't like this mail client very much. I wish there was another alternative.

local delete just provides a way to free up memory if you have large attachments or message without actually deleting the message itself.
you didn't answer what type of server you are connecting with but I always use pop3 and don't have this problem so I'm suspecting you're using imap or possibly an exchange server? the answer to this might give a bit more clue to someone with experience with those types of servers

It must be the way the phone handles emails because my co-worker has a HTC Wing (Windows Mobile 6) and her emails do not get removed from the server when she downloads them and delete them on the phone.

I do not have any experience with WM6, but considering that the e-mail app is Outlook Mobile, it is likely that it features similar functions to the PC version, where you have the option to 'leave a copy of messages on server'.
