Possibly the most expensive method, but if train times match up, I'm guessing it'd be less than 2 hours.
You could always substitute the Gatwick Express for a normal Southern Trains service (an Advance one-way ticket is about £5, as opposed to the likely ~£20 for the Express)
Not sure if the same can be done with the Stansted Express, but it's worth looking into that.
Feel free to ask if you have any further questions, I'll be lurking.
EDIT: London Victoria to Gatwick on a regular Southern service takes 30-45 minutes, but the trains can get busy as they stop at multiple stations.
EDIT2: Can't see any option other than a Stansted Express train, so I make the total cost about £28 (ever so slightly less if you an Oyster card on the Underground leg of the journey ~£26.50).

@arien617, firstly, thanks so much for the info!
I have checked all info/routes given in this thread. Now id be happy to try them, BUT, since im flying AirAsia, being a budget airline, im a little worried about delays and what not.
As a result, I have opted against trains/local buses. I get in at 9.40pm. Again, I may run into delays, customs, etc etc. I dont want to leave it to chance and risk missing the last trains/buses for the night.
So... I have decided im going to take the National Express Coach, direct from Stansted to Gatwick. Bit pricey, but again, dont want to risk getting stuck overnight. Specially since I have a 9am'ish flight the next morning, dont want to get stuck in traffic! The one im looking at leaves at 11.55ish and gets me to Gatwick at 4am. Not the best time I know, but i can sleep on the coach and then sleep at gatwick or something for a few hours!
I know there is always coupons/discount codes for these type of things. Where would be the best place to look for them? or does anyone know any?
edit: found one for 20% off = bristoluni
ticket was 24.66gbp!

Just double check that's one bus.
I almost booked what I thought to be an overnight sleeper to Edinburgh from Euston, turns out it stopped somewhere in the Midlands and you had to kill 4 hours in the station.

stops off at Heathrow airport for about 1hr.... then jump onto another bus.... no biggie really!
just prefer to get to/close to Gatwick before the morning!
