You don't need a mic next to the speaker to record incoming calls. Remember the data exists in digital form as decoded from the incoming GSM datastream. In order to hear it from the speaker, it has to be converted in to analog. To record the call, all that has to happen is the processor needs to write the digital data to a file, instead of to the analog-to-digital converter. Unless that function is hardwired (somewhat unlikely), it should be fairly simple.
