These are the correct settings for setting up AT&T email on the T68i:
Messages>yes / E-mail>yes / Options>yes / Edit account>yes / M-modeyes / protocal>yes / imap>yes
Incoming server:
imap.attwireless.net>yes / incoming port 143>yes / (mailbox should already be set up with user name and password set up)
Outgoing server:
smtp.attwireless.net>yes / outgoing port 25>yes / e-mail address (user
yes">name@mobile.att.net)>yes / download>yes / headers only>yes / set up account>yes / m-mode>yes / then No will take you back to main menu.

I use a service called HOTPOP for my smtp/pop mail. It works flawlessly for sending email with the onboard client. I also use MMode mail, as it is configured properly on my client as well. I also have that account set up on my Ipaq, so if I have a longer email to send, I can write it on the Ipaq, and email it off (through Infrared) with minimal GPRS usage.
I prefer HOTPOP, as the MMode mail has all sorts of extra header information at the top of emails. I am not certain what the point of them is.
