Well, seems to me the original fon FW had only english, then an upgrade added italian. With the master reset you reset it to original FW.
Here a possible solution (Copy straight from SE website)

How do I change language in the P900?
When you start your P900 for the first time you are obligated to choose a language.
When a language is selected, the unused languages are deleted in order to conserve storage space.
You can at any time use the "Download Language" utility on the "PC Suite for P900" CD, to load and delete languages.
When you have selected a new language you have to turn the P900 off and then on again for the change to take effect.

The problem cannot be solved as you suggest, because on the CD I have the same language file you can find on SE site. As my software is newer than the language file version, there is no way to update the language (SW v. R5B, language version on site R4B)
Other suggestion ?
