I know it's not my operator as it runs fine when I dial the number, just when I use the shortcut (holding done 1 key, or selecting 'call voicemail' in messagine), that's the issue. My T630 does it fine with it's shortcut

I work for my provider (Orange), so I have an understanding of if the problem would be at Orange's end or net.

Absolutely this is a bug, well 2 bugs. The menu option missing may be SIM card related, but the fact it witholds caller ID is a bug. The fact that holding down the 1 key does nothing on line 2 is also a bug.
This is what I did.
Create a voicemail entry in the phone book with the pauses and pin codes etc to go through to your voicemail. It must be a phone book entry because when you change the voicemail number it won't let you put in enough characters.
Switch off phone. Switch on phone. As soon as it finds Orange, hold down 1. It will say "opening phonebook". It will then ask if you want to change your voicemail number. Say yes, click lookup, and choose your voicemail number.
Additionally...create another entry in your phone book with just 123 or +447973100123 in it. Add it to speed dial 1. To get to your answerphone more quickly, from the standby screen, just press 1 followed by "Call".

Retrieving the voicemail number:
1) First goto Phonebook->Special numbers->Service numbers->scroll to 'Voice Mail' and write down the number. This is the voicemail number provided by your local company.
2) Next, (Here you have to delete your phone book, but you can easily resync it later with Outlook) goto Phonebook->Advanced-> 'Delete all' and confirm by pressing 'Yes'. Enter the lock code (Default is 0000).
3) Return to the main screen and press-hold the 1-key. You'll be asked to confirm the setting of the voicemail number. Press 'Yes'.
4) Enter the voicemail number as you retreived from the first step (for + press-hold the 0-key). If you want to enter your password automatically just press-hold the 7-key untill the 'p' character appears and enter the password (usually followed by #)

I didn't need to delete all my contacts - just followed Jon's solution:

When you say "yes" to change the voicemail number, you don't immediately have an option to lookup - you need to delete the existing number first - then "look up" appears.

The one thing that I would add is that, if you use pauses and pin details in the new phonebook/voicemail number, when you change the number after switching on your phone, it will automatically dial the new voicemail number. When it dials for the first time, mine came up as number unobtainable (because I'd added the pauses). Don't worry - when you come back to the standby screen and press 1 for the first time - it will work.
